Quick & Easy Scalloped Potatoes in the Instant Pot

Scalloped potatoes not from a box? I’d never tried it personally until now. My oldest daughter loves the boxed version so I decided to try making them for her in the Instant Pot and I’m amazed how well they turned out. 

I used about 2 pounds of yellow or Yukon potatoes. I love these potatoes. They make an amazing mashed potato, the flavor is slightly buttery in taste compared to Russet or Red.

Slice them thinly about 1/4 an inch in width.

Add potatoes, 1 cup of water, 2 sliced green onion and 3 minced garlic cloves to the Instant Pot. Cover, seal and cook on high / manual for 1 minute.

At this point, heat your broiler because we want to finish this off by browning the top.

Go ahead and quick release, covering the vent with a kitchen towel in case of splatter. Add in the 3 tbsp of heavy cream, 1 tsp salt, 1/2 tsp pepper and 3/4 cup of cheddar cheese. Mix together until the cheese melts.

Transfer to a baking dish, top with 1/4 cup of sharp cheddar and broil for about 4-5 minutes until the cheese starts to brown.

I’ll never go back to boxed again with how easy and quick this was. We ate this as a late night snack but this will go perfectly as a side dish. I might just make it for Thanksgiving.

Ingredients

  • 2 lbs yellow potatoes
  • 1 cup water
  • 2 green onion sliced
  • 3 cloves garlic minced
  • 3 tbsp heavy cream
  • 1 tsp salt
  • 1/2 tsp white or black pepper
  • 3/4 cup sharp cheddar
  • 1/4 cup sharp cheddar topping

Instructions

  1. Prepare your ingredients. Slice potatoes about 1/4 inch thick. Slice green onion and mince garlic.

  2. Add potatoes, water, green onion, and garlic to Instant Pot.

  3. Cover, set to sealing and cook on high pressure / manual for 1 minute. 

  4. Preheat your broiler.

  5. Quick release (be careful of sputter) and add in heavy cream, salt, pepper and 3/4 cup of cheese. Stir to mix together.

  6. Transfer to a baking dish, top with 1/4 cheese and broil for 4-5 minutes until cheese starts to bubble and brown.

  7. Serve and enjoy!
